Coffee is Honduras' most valuable export and is supported by the Honduran Institute of Coffee (IHCAFE) and other private and non-government organizations (NGO's) representing all aspects of the coffee value chain. It is important to illustrate the sustainable aspects of Specialty Coffee given that coffee is a worldwide commodity whose market is a community that values the environment, the social aspects of those that produce it and their ability to maintain a standard of living that supports the needs of themselves and their families. Catracha Coffee Company (CCC) buys "Quality Coffee" from growers in the community of Santa Elena, Honduras and delivers it to the Specialty Coffee Market in the Western United States. Their footprint in the $46 billion U.S. Specialty Coffee Market is microscopic but to the 60 growers that supply CCC and their community it represents their revitalization. This Capstone outlines the marketplace for CCC and creates value in their market niche by undertaking programs to return value to their coffee companies and work with their growers to incorporate more of a structured approach to sustainable development by acquiring organic certification and initiating a "sustainable scorecard" that brings attention to and higher prices to their growers.
